Chocolate Dream Mousse

 

Ingredients: 

2 large, ripe avocados – flesh only
2 tbs coconut oil
1/2teaspoon vanilla extract
1/2 cupcoconut flower sugar
1/3 cup cacao powder (or carob powder)
Big pinch of sea salt

Preparation:

Combine the avocados, water, vanilla and salt in a the Ultimax high-speed blender.
Add the sugar and blend again until well-combined and smooth. You will need to use the tamper here with the blender.
Add the cacao powder, and blend till smooth.
Taste for sweetness and add more coconut sugar if you like


Rum and Raisin Ice-cream

Ingredients: 

2 cups coconut meat, frozen
1 cup soaked and sprouted cashew
½ cup chia gel
1/3 cup coconut flower sugar
1 cup raisin enzymes
Pinch of Himalayan sea salt

Blend in the The Ultimax High Speed Blender till smooth.


Cacao Berry Ice-Cream

 

Ingredients: 

Makes 2 pints
Cashew nuts 1 cup
½ cup salba chia gel
½ cup raw cacao
1 cup coconut flower sugar
½ cup coconut water/nut milk/filtered water
1 cup of raw strawberry jam (or fresh strawberries blended in honey)
2 tbs of cacao nibs

Blend in the Ultimax High Speed Blender till smooth. Sprinkle with cacao nibs.


 

Paw Paw Sorbet Delight

Ingredients: 

A medium sweet papaya (cubed & frozen)
Squeezing limes

Blend in the Ultimax high speed blender till smooth

Green Smoothie

This quick and easy recipe is a great way to start your day off right. With fresh fruit and two full cups of spinach, you’ll get three servings of fruit and vegetables into your diet.

Ingredients

Water – 1/2 cup
Ice cubes – 1/2 cup
Banana– 1
Green grapes – 1 cup
Navel orange – 1 (peeled)
Spinach – 2 cups

Instructions

Combine all ingredients in the blender in the order listed and place lid on the container
Turn blender on and increase speed to high
Blend until all ingredients are thoroughly combined and mixture is smooth, approximately 1-3 minutes

Roasted Salsa

This quick and easy salsa recipe has a rich, smoky flavor from the roasted ingredients and a perfect texture from the blender. It’s a great way to use those fresh, summer vegetables.

Ingredients

Medium tomatoes – 4
Red onion – 1/2
Jalapenos – 2
Red bell peppers – 1
Corn – 1 ear
Garlic – 1 clove
Lime – 1
Cilantro – 1/2 bunch

Instructions

Roast all tomatoes, onion, jalapenos, bell peppers, and corn over high heat until skins are slightly charred
Allow ingredients to cool slightly in covered bowl
Remove skin from tomatoes and peppers
Add tomatoes, peppers, onion, and garlic to blender
Place cover on container and blend on high for 10-15 seconds until ingredients are roughly chopped
Cut corn kernels from ear and add to blender
Add juice from lime, garlic, and cilantro to blender
Pulse machine several times to chop remaining ingredients and combine
Chill in refrigerator until ready to serve


Tomato soup and grilled cheese

Roasted Tomato Soup

Grilled cheese and tomato soup was a favorite meal of mine when I was a child and that hasn’t changed as I’ve gotten older. What has changed a bit are my tastes and appreciation for fresh flavors.

Since tomato soup from Campbell’s can doesn’t cut it anymore, I’ve been experimenting and have finally found a new favorite, roasted tomato soup. Roasting the ingredients in the oven gives this soup a rich flavor and blending it gives it that smooth, creamy texture.
Ingredients
Olive oil – 1/4 cup

Roma tomatoes – 2 1/4 lbs

  • Small red onions – 2
  • Fresh lemon thyme – 6 sprigs
  • Sugar – 1 tsp
  • Sea salt – 1 tsp
  • Garlic clove – 2
  • Vegetable stock – 2 cups
  • Sea salt and fresh ground pepper – To taste

Instructions

  1. Preheat oven to 325°
  2. Put tomatoes, onion, thyme, sugar, salt, garlic and oil in a large bowl
  3. Use your hands to mix the ingredients to make sure they are well combined and covered in the oil
  4. Pour mixture from the bowl onto a baking sheet and put in oven
  5. Roast for 1 1/2 hours
  6. Remove from oven and discard thyme sprigs
  7. Put tomatoes, onions, and garlic in blender container and pour in any remaining juices from baking sheet
  8. Put container on blender base and turn on blender and slowly increase speed to high
  9. Add 1-2 cups of vegetable stock if mixture is too thick to blender thoroughly
  10. Blend on high for 1-2 minutes until mixture is smooth
  11. Pour soup into bowl, add salt and pepper to taste, and enjoy
